BEEF AND BEANS SOUP

Ingredients
- 3 tablespoons (45ml) oil
- 2 garlic cloves, minced
- 1 bay leaf
- 2 cups beef, cubed
- 2 large tomatoes, chopped
- 3 cups sugar beans, cooked
- 4-5 cups (1litre) vegetable stock
- Salt and pepper to taste
Instructions
- In a saucepan, heat oil.
- Add garlic and bay leaf, fry for 3-4 minutes.
- Add beef and tomatoes, stir fry for a further 3-4 minutes.
- Add beans and stock.
- Cook for 20-25 minutes or until meat is cooked through.
- Season well and serve.
