Traditional tripe and potato stew

Ingredients
- 1kg tripe (beef or mutton), washed and cut into pieces
- water (enough to cover the tripe during cooking)
- 4 potatoes, peeled and quartered
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 tablespoons curry powder
- salt and cayenne pepper to taste
- 1pkt Knorr Brown Onion Soup
Instructions
- Cover tripe with water, bring to the boil and simmer for three hours.
- Add potatoes, onion, garlic, curry powder, salt and cayenne pepper to taste.
- Mix Knorr Brown Onion Soup with a bit of water to form a paste. Add to tripe stew and stir in well.
- Add more water if the stew is dry. Simmer for a further 30 minutes until the potatoes are cooked through.
- Serve hot over pap or samp.
