SEALED HAKE WITH OLIVES

Ingredients
- 8 thick hake steaks
- 4 tablespoons (60ml) margarine, melted
- 2 cups black olives
- 2 cups cucumber, thinly cubed
- ½ cup (125ml) oil
- 3 tablespoons (45ml) vinegar
- 2 tablespoons sugar
- Salt and pepper to taste
Instructions
- Heat the pan. Meantime, brush the hake steaks with melted margarine.
- Season well with salt and pepper.
- Lightly fry for 5-7 minutes on each side.
- In a bowl, mix the olives, cucumber and drizzle with oil, vinegar and sugar.
- Season well with salt and pepper.
- Serve the fish with olive salsa.
- Serve with rice or mashed potatoes.
