- 2 cups frozen peas
- 2 medium potatoes, cubed
- 2 tablespoons butter
- 1 spring onion, chopped
- 4 cups (1ℓ) vegetable stock
- 1 cup (250ml) cream
- Salt and pepper
- Pumpkin seeds, for serving
- Crispy chopped bacon, for serving
- In a large saucepan, heat butter and fry onion until soft.
- Add peas, potatoes and stock. Cook for 25–30 minutes or until soft.
- Add cream, and blend until smooth. Season with salt and pepper.
- Serve with bacon.
