Brinjal Fries
Prep time: 15 minutes Cooking time: 8–10 minutes Serves: 4
- 1 cup (250ml) oil
- ½ cup self-raising flour, sifted
- ½ cup Parmesan cheese, grated
- 1 cup (250ml) soda water
- 1 egg, beaten
- Salt and pepper
- 4 large brinjals, sliced thickly
- Spicy mayonnaise, for serving
- In a frying pan, heat oil.
- Meanwhile, in a bowl, mix flour, cheese, soda water and egg. Season with salt and pepper.
- Deep brinjal into this batter. Carefully place into hot oil and fry for 8–10 minutes or until golden.
- Serve with spicy mayonnaise.
