TIP for this dessert: For the doughnut shape (with hole in centre), pour your dough into a ring or savarin mould baking dish.

Soft pudding with butterscotch sauce

Ingredients
  • 1 cup (250ml) self-raising flour
  • ½ cup castor sugar
  • ½ cup (125ml) milk
  • 4 tablespoons (60ml) butter, melted
  • 1 egg, beaten
  • Ice cream, to serve.
Instructions
  1. Preheat the oven to 180C.
  2. In a bowl, mix all the ingredients (except sauce) together to form a smooth dough.
  3. Pour the dough into a lightly greased baking dish.
  4. Meanwhile, in a saucepan combine the sauce ingredients together. Let it simmer for 5-10 minutes. Pour over the pudding dough.
  5. Bake for 25-30 minutes, or until golden.
  6. Serve hot with vanilla ice cream.
