Ingredients
- 1 large rye bread
- ¾ cups margarine
- ½ cucumber, grated
- 2 carrots, grated
- 1 large red onion, thinly sliced
- 2 cups canned chickpeas, drained
Instructions
- Spread the margarine over slice of bread.
- Arrange the cucumber, carrots, onion and chickpeas on the bread slice.
- In a small bowl, combine the dressing ingredients. Season well with salt and pepper.
- Spoon the dressing over your sandwich ingredients and close with another slice of bread.
