Chicken Skewers Glazed With Pomegranate

Ingredients
  • 4 chicken breasts, skewered
  • ½ cup (125ml) pomegranate juice
  • ½ cup honey
  • 4 tablespoons (60ml) butter, melted
  • 1 garlic clove, crushed
  • Pinch of dried chillies
  • 1 teaspoon lemon zest
  • Handful fresh thyme
  • Natural yoghurt to serve
Instructions
  1. Preheat oven to 180°C.
  2. Grill chicken for 20–25 minutes or until half cooked.
  3. Meanwhile, combine juice, honey, butter, garlic, chillies, zest and thyme in a saucepan. Boil for 15–20 minutes or until sticky.
  4. Remove chicken from the oven, brush with glazing and return into the oven, basting every 3–5 minutes until cooked through.
