- 2 cups leftover beans
- 4 tablespoons (60ml) oil
- 1 garlic clove, chopped
- 1 thumb size fresh ginger, chopped
- 1 tablespoon garam masala
- 1 teaspoon ground turmeric
- 1 star seed
- 1 cinnamon stick
- 1 onion, chopped
- 1 tablespoon Durban curry powder
- 1 onion, chopped
- 2 tomatoes, finely chopped
- 1 cup frozen peas, thawed
- Handful fresh coriander, chopped
- Salt and pepper to taste
- 3 rolls to serve
- Heat oil in a frying pan. Add garlic and ginger. Fry until soft.
- Add spices, onion, tomatoes, beans and peas. Season with salt and pepper. Cover with lid and simmer for 8–10 minutes.
- Add coriander and serve with rolls.
