Serves: 4
- 4 chicken breasts, boneless
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 green pepper, thinly sliced
- ½ cup (125ml) balsamic vinegar
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon sesame seeds
- Salt & pepper to taste
- Preheat oven to 180ºC.
- Cut chicken breast thinly lengthways and flatten with rolling pin.
- Meanwhile, in a bowl, mix peppers and season well.
- In another bowl, mix vinegar, honey, garlic, ginger and sesame seeds.
- Place pepper in the middle of flattened chicken. Roll to form sausage shape and secure with toothpicks. Place onto oven tray.
- Brush with honey mixture and grill for 25–30 minutes, basting every 4–5 minutes.
- Serve immediately.
