Serves: 6–8
- 1 cup vanilla ice cream
- 1 cup frozen berries, thawed
- 8–10 meringues
- 1 tablespoon lemon zest
- 1 teaspoon vanilla essence
- 4 tablespoons honey
- ½ cup fresh pomegranates seeds
- Raspberries coulis
- In a bowl, combine ice cream, zest, essence and honey.
- Spoon ice cream mixture into each meringue. Place into freezer. Just before serving, sprinkle with pomegranate and drizzle with coulis.
- Serve immediately.
