Don’t let your leftover food go to waste – turn them into something delicious and tasteful the following day.

Serves: 1–2
- 1 baguette bread, halved
- 2 tablespoons basil pesto
- 2 cups cooked butternut
- 1 green pepper, cooked
- 1 red pepper, cooked
- 1 yellow pepper, cooked
- ½ cup Mozzarella cheese, grated
- ½ cup Cheddar cheese, grated
- 1 cup canned lentils, drained
- Salt and pepper, to season
- Preheat the oven to 220˚C
- Spread bread with pesto sauce.
- Layer vegetables, cheeses and lentils. Season with salt and pepper. Top with other slice bread.
