Cabbage and carrot Salad
Prep time: 15 minutes
Serves: 2
- 1 cup carrot, shredded
- 1 cup red cabbage, shredded
- ½ cup walnuts, chopped
- 1 yellow pepper, sliced
- 1 red pepper, sliced
- Handful fresh watercress
- 1 cup lentils, cooked
Dressing
- 1 garlic clove, minced
- 3 tablespoons (45ml) olive oil
- 2 tablespoons (30ml) honey
- 3 tablespoons (45ml) lime juice
- 1 teaspoon whole mustard
- Pinch cayenne pepper
- Salt and pepper
- Arrange salad ingredients on a platter.
- For dressing, whisk ingredients in a jug.
- Drizzle over salad.
- Season with salt and pepper, and serve.
Green salad
Prep time: 15 minutes
Serves: 2
- Handful baby spinach
- 1 avocado, sliced
- 1 cup broccoli, florets
- 1 green apple, sliced
- ½ cup cucumber, sliced
- 1 cup canned chick peas, drained
Dressing
- 4 tablespoons (60ml) lemon juice
- 4 tablespoons (60ml) olive oil
- Salt and pepper, to season
- Arrange ingredients on a salad platter.
- For dressing, whisk ingredients in a jug. Add salt and pepper to season.
- Drizzle over salad.
- Add salt and pepper to season, and serve
Asparagus and tomato salad
Prep time: 15 minutes
Serves: 2–3
- Handful fresh asparagus, roasted
- 1 cup fresh cherry tomatoes, halved
- ½ cup walnuts, chopped
- Handful fresh watercress
- 1 grapefruit, peeled and segmented
- ½ cup pumpkin seeds
- 1 tablespoon sesame seeds
- Salt and pepper
Dressing
- 1 clove fresh garlic, minced
- 1 tablespoon fresh chives, chopped
- 1 tablespoon Dijon mustard
- 4 tablespoons (60ml) olive oil
- 4 tablespoons (60ml) white vinegar
- ½ teaspoon sugar
- Salt and pepper
- Arrange salad ingredients on a platter.
- In a jug, whisk dressing ingredients. Drizzle over salad
- Season with salt and pepper, and serve.
Beetroot salad
Prep time: 15 minutes
Serves: 2–3
- 3 small beetroots, cooked and sliced
- 3 radishes, sliced
- 3 large carrots, sliced
- ½ fresh mango, sliced
- Handful fresh coriander, chopped
- 2 chicken breasts, grilled
Dressing
- 4 tablespoons (60ml) red wine vinegar
- 4 tablespoons (60ml) olive oil
- 1 garlic clove, chopped
- 1 tablespoon honey
- 1 tablespoon granadilla pulp
- Salt and pepper
- Arrange salad ingredients on a platter.
- Mix dressing ingredients in a bowl.
- Drizzle over salad. Season with salt and pepper, and serve.
Citrus and couscous salad
Prep time: 15 minutes
Serves: 2–3
- 1 large orange, peeled and segmented
- 1 grapefruit, peeled and segmented
- 2 cups couscous, cooked
- ½ cup fresh green onion, chopped
- 1 cup celery, sliced
- 1 avocado, sliced
- Salt and pepper
Dressing
- 4 tablespoons (60ml) ???
- ½ cup mango, chopped
- 3 tablespoons (45ml) lemon juice
- ½ teaspoon sugar
- Salt and pepper
- Arrange ingredients on a platter.
- For dressing, blend all ingredients until smooth.
- Drizzle over salad, and serve.
Turmeric rice salad
Prep time: 15 minutes
Cooking time: 15 minutes
Serves: 2
- 1 teaspoon ground turmeric
- 1 cup brown rice, cooked
- 1 tablespoon (15ml) olive oil
- 1 red onion, chopped
- 2 garlic cloves, chopped
- 1 cup asparagus, chopped
- 2 handful spinach leaves, chopped
- 1 celery stick, chopped
- 1 red apple, chopped
- Handful fresh coriander, chopped
- 2 salmon steaks, grilled and flaked
- 2 tablespoons (30ml) lemon juice
- Salt and pepper
- In a frying pan, heat oil on medium high.
- Fry onions and garlic until soft.
- Add the remaining ingredients (cook for how long?). Season with salt and pepper, and serve.
Mixed fruit salad
Prep time: 10 minutes
Serves: 2–3
- 1 cup fresh strawberries, halves
- 1 cup baby carrots, halved
- 1 cup cherry tomatoes, halved
- Handful fresh mints
- 2 large naartjies, halved
- Arrange ingredients on a salad platter, and serve.
Avocado and radish salad
Prep time: 10 minutes
Serves: 2
- 1 large avocado, halved
- 1 cup fresh radishes, halved
- 1 cup fresh blueberries
- 1 cup cherry tomatoes, halved
- 2 cups micro salad leaves
- 2 tablespoons (30ml) lime juice
- Salt and pepper
- Arrange ingredients on a salad platter.
- Drizzle with lime juice. Season with salt and pepper, and serve.
