While eating vegetables is ALWAYS a good thing, there are some veggies that are better for you than others. NEVER cut out veggies from your diet – they provide essential vitamins and minerals for your body to work optimally and for it to release energy from your fat cells.

We’ve identified 4 of the most healthy vegetable options that you can eat to your heart’s content:
1. Baby marrows (aka zucchini). These little guys come in at a paltry 3,5 grams of carbs per cup! That’s only 15 calories!
And you can do so much with them. From their regular uses in stir fries, stews, or as a dipping snack to spiralising them and using them as a pasta substitute, baby marrows are a wonderful food to have in your kitchen.

2. Broccoli. One cup of raw or cooked broccoli has only six grams of carbohydrates (meaning only around 24 calories). Just remember that, if you think you don’t like broccoli, you’re probably just cooking it wrong. Don’t boil it! Steam it, roast it, or eat it raw and you’ll enjoy it much more.
3. Brussels sprouts. Everyone seems to really dislike this wonderful vegetable. And I’m not sure why. If you lightly fry these in a LITTLE butter (or coconut oil), onion, and garlic I can’t see why anyone would prefer NOT to have them.
Plus they have only 12 grams of carbs per cup (around 50 calories). If you don’t want to fry them try putting them into soups or stews for added nutrition.

4. Pumpkin. Unlike its lookalike friend (butternut), pumpkin has only 8g of carbs per cup (or 32 calories). You can cook it any way you like really. It’s useful as a hot vegetable, a soup or stew ingredient, a salad ingredient, or in a smoothie.
Just don’t add sugar to this already sweet veggie. Enjoy!
