Try this simple recipe for breakfast or lunch.
This minted pea and avocado smash on toast with feta, soft boiled egg and harissa chilli oil is a must try!

Serves: 1
Ingredients include:
1/2 avocado
A handful of peas, cooked
A small handful of fresh mint, finely chopped
1 egg
1tsp rose harissa paste
Olive oil
1/2tsp chilli flakes
Pinch of paprika
A handful of feta cheese
Crushed seeds for topping
Salt & pepper
1/2 lemon
Bread of your choice
Method:
1.Mash your avocado, add a squeeze of half a lemon, pinch of salt & pepper. Crush in the cooked peas and fresh mint and mix to a smooth consistency.
2.Bring a pan of water to the boil and gently drop in your egg, shell on, and cook for 5-6 minutes depending on its size. (Poaching will be just as good)
3.In a small bowl, add the harissa, a few 1tsp of olive oil, paprika and chilli flakes and mix well.
4.Toast your bread.
5.Spread the avo & pea smash onto the toast. Plonk on the egg, sprinkle over the feta cheese, drizzle over the chilli oil and some seeds for a bit of crunch.
