Not quite sure on what to do with those extra potatoes? Why not load them up with some deliciousness!
This loaded spud is filled with a dill and lemon infused cream cheese, refreshing cucumber and a delicious hot smoked salmon fillet.

Serves: 1
Ingredients:
1 jacket spud
1 heaped spoonful of cream cheese
½ lemon juice
A bunch of fresh dill
Black pepper
1 hot smoked salmon fillet (supermarket, pre-cooked for ease)
¼ cucumber, thinly sliced
Method
1.Preheat the oven to 200C. Rub a little seasoning over your jacket potato and pierce a few holes into it using a fork. Place on a baking tray and bake for 45 mins-1 hour, for an extra crispy skin, rotating halfway through.
2.Meanwhile, add the cream cheese, lemon, dill and black pepper to a small mixing bowl and mix well to combine. Set aside in the fridge.
3.Once the potato is cooked, remove from the oven and set aside to cool slightly- warning; hot potato! Once cooled, slice a cross into the potato and squeeze gently to create an opening to add your fillings too.
4.Add a dollop of your cream cheese, sprinkle over the cucumber slices and flake over the salmon. Add a little more cracked black pepper and tuck in!
