Chicken in Wine Sauce
Prep time: 15 minutes
Cooking time: 1 hour
Serves: 4
- 8 chicken thighs
- 1 cup (250ml) white wine
- 2 tablespoons butter
- 1 tablespoon (15ml) oil
- 1 red onion, chopped
- 2 garlic cloves, crushed
- 1 teaspoon hot curry powder
- 1 cup chopped mushrooms
- Sprig fresh rosemary
- 2 cups (500ml) chicken stock
- 1 cup (250ml) cream
- Salt and pepper
- Sprig fresh thyme, for serving
1. Heat butter and oil in a large frying pan. Add chicken and brown for 4–5
minutes. Remove from pan.
2. Add onion and garlic. Fry for 5 minutes or until fragrant.
3. Add curry powder, mushrooms, rosemary, chicken, wine, stock and cream. Season
with salt and pepper.
4. Cover with a lid and simmer for 45–50 minutes or until cooked through.
5. Serve with thyme leaves.
