Mixed Green Vegetable Curry
Prep time: 10 minutes
Cooking time: 25 minutes
Serves: 4
- 2kg fresh spinach, chopped
- 1kg fresh courgettes, chopped
- Handful green beans, chopped
- 2 tablespoons (30ml) oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 tablespoons curry paste
- 1 cup (250ml) coconut milk
- Salt and pepper
- Handful fresh coriander, for serving
- Cooked rice, for serving

1. Heat oil in a saucepan. Fry onion and garlic until fragrant.
2. Add curry paste, vegetables and milk. Season with salt and pepper. Cover with a lid and cook for 15–20 minutes.
3. Serve with coriander and rice.
