Vegetarian meals don’t have to be boring, not when there is this delectable spicy couscous and vegetable bowl to make, by Ntwenhle Gcabashe

Serves: 4
- 2 cups couscous, ready-made
- 2 tablespoons (30ml) oil
- 1 red onion, chopped
- 3 garlic cloves, crushed
- 2 cups tomato puree
- 2 red chilli peppers
- 1 cup mushroom, sliced
- 1 cup black olives, sliced
- Salt and pepper
- ½ red pepper, sliced
- 1 cup Cheddar cheese, grated
- Micro herbs, for serving
- Preheat the oven to 200°
- Heat oil in a frying pan. Fry onion and garlic until cooked. Add tomato puree, red chilli peppers, mushrooms and olives. Season with salt and pepper.
- Place couscous into a lightly greased oven dish. Top with vegetable mixture and red pepper slices. Sprinkle with cheese. Bake for 15–20 minutes or until golden.
- Serve with micro herbs.
