- 2 kg beef tripe
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 green chilli, deseeded and chopped
- 1 tablespoon cayenne pepper
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- 1 teaspoon ground turmeric
- 2 large carrots, roughly chopped
- 6 cups (1½ ℓ) water
- 1 tablespoon soup powder
- Micro leaves, for serving
Slow cooked trotters and lentils
- Wash tripe thoroughly.
- In a big pot, boil tripe, onion, garlic, chilli, spices, carrots and water for 4–5 hours or until tender.
- Mix soup with small amount of water. Pour over tripe. Mix well and cook for 8–10 minutes.
- Serve with micro leaves.
