Serve 4-5
- 1 cup canned chickpeas, drained
- 1 cup canned butter beans, drained
- 1 cup canned red kidney beans, drained
- 1 onion, finely chopped
- 1 cup ham, finely chopped
- 3 garlic cloves, crushed
- 1 thumb-size fresh ginger, grated
- Handful fresh coriander, chopped
- 2 medium carrots, chopped
- 10 cups (2.5L) vegetable stock
- Fresh parsley, for serving
- Doritos chips, for serving
- In a large saucepan, add beans, onion, ham, garlic, ginger, coriander, carrots and stock. Cover with a lid and cook for 30-35 minutes or until reduced in size.
- Serve with parsley and Doritos chips
