Apricot Jam Prawns
Prep time: 60 minutes
Cooking time: 12 minutes
Serves: 3–4
- 12 king prawns, cleaned
- 4 tablespoons apricot jam
- ½ cup tomato sauce
- 4 tablespoons (60ml) oil
- 2 garlic cloves, crushed
- 2 red chillies, chopped
- 4 tablespoons (60ml) balsamic vinegar
- 2 tablespoons brown sugar
- 2 tablespoons (30ml) soya sauce
- Salt and pepper
- Lime slices, for serving
- Fresh coriander, for serving
- Mix all your ingredients in a bowl. Marinate for 45–60 minutes.
- Thread prawns onto wooden skewers.
- Braai for 5–6 minutes on each side or until cooked. Serve immediately.
