- 2 cups beef, cubed
- 2 tablespoons (30ml) oil
- 1 onion, chopped
- 1 butternut, peeled and cubed
- 2 carrots, peeled and chopped
- 1 green apple, chopped
- 1 tablespoon curry powder
- 1 cup tomato puree
- 1 tablespoon tomato paste
- 2 cups (500ml) beef stock
- Salt and pepper
- Yoghurt, for serving
- Cinnamon rice, for serving
- In a large frying pan, heat oil. Add beef and fry for 12–15 minutes or until browned.
- Add onion, butternut, carrots, apple, curry powder, tomato puree and paste. Add stock and cover with a lid. Cook for 40–45 minutes or until vegetables are soft.
- Season with salt and pepper.
- Sprinkle yoghurt on top and serve with rice.
