Prep time: 5 minutes Serves: 4
- 2 cups cooked beetroot, finely grated
- 2 cups mango, peeled and chopped
- 1 banana, chopped
- Pinch ground cinnamon
- 4 tablespoons (60ml) honey
- 1 cup (250ml) coconut cream
- 1 cup blueberries
- 1 cup raspberries
- Mint, for serving
- Blend mango, banana, cinnamon, honey and coconut cream until smooth. Pour into serving cups.
- Blend beetroot, blueberries and raspberries until smooth. Leave some berries for garnishing.
- Pour on top of the mango mixture.
- Garnish with fresh berries and mint leaves.
