Serves: 7 – 8
Ingredients:
- 1kg SPAR Boerewors, grilled and chopped
- 1kg SPAR Chicken Thighs, grilled
- 3 tablespoons (45ml) SPAR Sunflower Oil
- 3 cloves garlic, crushed
- 2 tablespoons fresh ginger, crushed
- 3 bay leaves
- 4 tablespoons SPAR Cook-in Sauce, Butter Chicken Curry
- 1 tin SPAR Tomato & Onion Mix
- Handful fresh coriander, chopped
- 6 cups SPAR Long Grain Parboiled Rice, cooked
- 2 cups SPAR Red Lentils, cooked
- Salt and pepper
Steps:
- Heat oil in a large frying pan. Fry garlic and ginger until soft.
- Add bay leaves, curry sauce, boerewors, chicken and tomato mix. Let it simmer for 25–30 minutes.
- Add coriander, rice and lentils. Season with salt and pepper. Cook for 8–10 minutes.
- Serve with beetroot and tuna salad.
