- 2 cups brinjal, sliced and cooked
- 2 cups bacon, chopped and grilled
- 1 spring onion, chopped
- Pinch cayenne pepper
- Salt and pepper
- 2 cups (500ml) cream
- 3 eggs, beaten
- 1 cup cheddar cheese, grated
- Crumbled feta cheese, for serving
- Preheat the oven to 180˚C.
- In a large bowl, mix brinjal, bacon, onion and cayenne pepper. Season with salt and pepper.
- Place in an oven dish.
- Meanwhile, whisk cream, eggs and cheese together in a jug. Pour over brinjal mixture and bake for 40–45 minutes.
- Serve immediately with feta cheese.
