CABBAGE AND BROCCOLI CURRY

Ingredients
- ½ cup (125ml) oil
- 1 large onion, chopped
- 1 fresh ginger, chopped
- 1 teaspoon ground turmeric
- 2 tablespoons curry powder
- 2 green chillies, chopped
- 1 cup canned tomato
- 1 large cabbage, shredded
- 2 cups sweet potatoes, cubed
- Handful fresh coriander, chopped.
Instructions
- In a frying pan, heat oil.
- Add onion, fry until soft.
- Add ginger and spices.
- Add chillies, tomatoes, cabbage and sweet potatoes. Reduce heat and cover with lid. Cook for 10-15 minutes.
- Just before serving add coriander.
