Chicken Skewers Glazed With Pomegranate

Ingredients
- 4 chicken breasts, skewered
- ½ cup (125ml) pomegranate juice
- ½ cup honey
- 4 tablespoons (60ml) butter, melted
- 1 garlic clove, crushed
- Pinch of dried chillies
- 1 teaspoon lemon zest
- Handful fresh thyme
- Natural yoghurt to serve
Instructions
- Preheat oven to 180°C.
- Grill chicken for 20–25 minutes or until half cooked.
- Meanwhile, combine juice, honey, butter, garlic, chillies, zest and thyme in a saucepan. Boil for 15–20 minutes or until sticky.
- Remove chicken from the oven, brush with glazing and return into the oven, basting every 3–5 minutes until cooked through.
