The chocolate lamington was named after Charles Wallace Baillie, Lord Lamington, who was the governor of Queensland, Australia, from 1895. Lord Lamington was known for wearing a homburg hat that resembled the cake.

- 1½ cups cake flour
- ½ cup cocoa powder
- 2½ teaspoons baking powder
- Pinch salt
- ½ cup brown sugar
- 1 cup (250ml) oil
- 4 eggs
- Chocolate sauce, for coating
- Coconut, for dusting
- Fresh cherries, for serving
- Preheat the oven to 180˚C.
- Sift cocoa, flour, baking powder and salt in a large bowl. Add sugar and mix.
- Whisk oil and eggs in a jug. Pour over dry ingredients, and mix well. Spoon into a lightly greased baking tin and bake for 45–50 minutes. Set aside to cool.
- Cut cake into small squares. Dip into chocolate sauce and dust with coconut. Serve with cherries.
