- 3 chicken breasts, cooked and chopped
- 2 handfuls spinach, finely chopped and cooked
- 2 tablespoons butter
- 1 onion, chopped
- 2 garlic cloves, crushed
- Salt and pepper
- 3 cups (750ml) cream
- 3 cups penne pasta, cooked
- 1 cup feta cheese, crumbled
- 1 cup cheddar cheese, grated
- Handful fresh thyme, chopped
- Heat butter in a frying pan. Fry onion and garlic for 3–5 minutes or until soft.
- Add chicken and spinach, and stir. Season with salt and pepper.
- Add cream, pasta and cheeses. Cook for 8–10 minutes or until the cheeses have melted.
- Sprinkle with thyme, and serve.
