Make your samp extra special with this creamy samp and nuts recipe by Ntwenhle Gcabashe

Serves: 3
- 2 cups samp
- 2 cups peanuts
- 1 cup (250ml) fresh cream
- 2 bay leaves
- 4 cups (1ℓ) vegetable stock
- 4 tablespoons (60ml) butter, melted
- 1 spring onion, finely chopped
- Handful fresh sage
- Handful fresh thyme, chopped
- 1 cup mushrooms, sliced
- Salt and pepper
- Parmesan cheese, for serving

- In a large saucepan, cook samp, nuts, bay leaves and stock until soft.
- In a pan, heat butter and fry onion, sage, thyme and mushrooms.
- Add cream and samp. Season with salt and pepper. Cook until thickened.
- Serve with parmesan cheese.
