Serves: 6–7
- 4 cups couscous, cooked
- 2 tablespoons butter, melted
- 1 red onion, chopped
- 2 garlic cloves, chopped
- 1 tablespoon curry powder
- 1 teaspoon cayenne pepper
- 2 cups canned butter beans, drained
- ½ cup fresh coriander, chopped
- 1 tablespoon (15ml) lemon zest
- Salt and pepper
- Grilled aubergines, for serving
- Heat butter in a frying pan. Fry onions and garlic on medium heat for 3–4 minutes or until soft.
- Add remaining ingredients. Season with salt and pepper.
- Serve with aubergines.
