125g ENTERPRISE No Pork French Polony, cubed
1 cup frozen sweet corn, thawed
1 roll short pastry
2 tablespoon fresh thyme, finely chopped
½ medium butternut, cubed and cooked
3 eggs, beaten
2 cups (500ml) cream
½ cup cheddar cheese, grated
Salt and pepper to taste
Method:
- Preheat the oven to 200˚C.
- In a bowl, mix sweet corn, thyme, butternut and ENTERPRISE No Pork French Polony.
- Meanwhile, roll out pastry onto floured surface. Cut out pastry and fit into light greased baking tray.
- Spoon polony mixture into pastry.
- In a jug, whisk eggs, cream and cheese. Pour over polony mixture. Bake for 40 – 45 minutes.
- Serve warm or room temperature.
