- 250g FATTI’S & MONI’S Gnocchi Pasta
- 30ml olive oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 1 x 410g tin cannellini beans, drained
- 250g cherry tomatoes
- ½ cup (125ml) sweet chilli sauce
- Handful basil, chopped + extra
- Salt and pepper
- 4 pork chops
- Squeeze lemon juice
- Cook the FATTI’S & MONI’S Gnocchi Pasta according to packet instructions. Drain.
- Heat the oil over medium high and sauté the onion and garlic for 5 minutes. Add the beans, tomatoes and sweet chilli sauce and cook for about 5 minutes until the tomatoes start to burst open. Mix through basil and season to taste.
- Meanwhile, season the chops. Heat a griddle pan or braai over medium high and cook the chops for about 5 minutes each side until cooked. Squeeze lemon juice over. Serve with the pasta, the bean sauce and extra basil scattered over.
