Prep time: 20 minutes Cooking time: 50 minutes Serve: 4 – 5 Medium
- Half a 500g packet FATTI’S & MONI’S Spaghetti, cooked
- 8 – 10 medium chicken thighs, boneless
- 2 tablespoon (30ml) oil
- 1 onion, finely chopped
- 2 garlic cloves, chopped
- 1 tablespoon fresh ginger, grated
- 1 tablespoon paprika
- 1 tablespoon ground cinnamon
- 1 large carrots, roughly chopped
- 1 tablespoon tomato paste
- 1 large tomato, chopped
- 2 cups (500ml) chicken stock
- 2 cups mushrooms
- Salt and pepper to taste
- Bring a pot of water to the boil. Add a pinch of salt and teaspoon of oil. Add FATTI’S & MONI’S Spaghetti and boil till cooked.
- In a frying pan, heat oil and fry onion, garlic and ginger until soft.
- Add paprika, cinnamon and chicken.
- Add carrots, tomato, tomato paste and stock. Let simmer until chicken is cooked through.
- Add mushrooms and cooked FATTI’S & MONI’S Spaghetti, mix well. Simmer for another 8 – 10 minutes.
- Serve immediately.
