- 2 tablespoons butter + extra for spreading
- 1 tablespoon (15ml) olive oil
- 2 onions, sliced
- ½ cup (125ml) mayonnaise
- 1 tablespoon (15ml) horseradish cream
- 1 x 50cm French loaf, cut open
- 60ml peppadews, halved
- 250g Sliced Meat Selection
- ½ small red onion, sliced
- handful rocket
- Heat a knob of butter and the oil over medium high and sauté the onions for about 30 minutes, stirring occasionally until caramelized. Add a splash of water, when necessary to deglaze (dissolve the browned pieces) the pan. Cool to room temperature.
- Meanwhile, combine the mayonnaise and horseradish. Spread both cut sides of the loaf with extra butter and the horseradish mayo. Sandwich together with the caramelized onion, peppadews, scrunched Sliced Meat Selection, red onion and rocket
