Interesting fact: “focaccia” is a flat, oven-baked Italian bread. But you can always make your own South African bread with this recipe.
GRILLED CHICKEN AND PEACH SALSA SANDWICH
Ingredients
- 1 large focaccia bread
- 6-8 skinless chicken breasts
- 4 tablespoons (60ml) oil
- 4 tablespoons dried mixed herbs
- 2 tablespoons minced garlic
- Salt and pepper to taste
- 2 cups fresh rocket
Instructions
- Heat a pan.
- In a bowl mix the oil, herbs, garlic and seasonings.
- Brush the chicken breast with oil mixture and grill for 3-4 minutes each side.
- Remove from heat and allow to rest.
- Meanwhile, in a small bowl mix the peaches, oil, onion, vinegar, sugar and rosemary.
- Arrange rocket and chicken onto your focaccia bread and spoon peach salsa over. Serve immediately.
