Snack time and light meals can be fun and delicious with these scrumptious hot prawn bites by Ntwenhle Gcabashe
Prep time: 30 minutes
Cooking time: 5 minutes
Serves: 5–6
- 4 cups prawns
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- Juice of 1 lemon
- 1 tablespoon lemon zest
- 3 tablespoons (45ml) oil
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- Salt and pepper
- Mashed avocado, for serving
- Cucumber, for serving
- Lemon wedges, for serving
- Mix prawns, paprika, cayenne pepper, lemon juice, zest, oil, honey and mustard in a bowl. Season with salt and pepper, and marinate for 25–30 minutes.
- Heat griddle pan, and grill for 4–5 minutes.
- Serve with avocado, cucumber and lemon wedges.
