Make yummy jam muffins in a flash using this lovely recipe from Ntwenhle Gcabashe

Serves: 12
- 250g butter
- 1 cup brown sugar
- 1 cup avocado, mashed
- 4 cups self raising flour
- pinch salt
- 4 eggs, beaten
- 1 tablespoon vanilla essence
- 1 1/2 cup coconut cream
- 1 cup apricot jam
- Preheat oven to 180C.
- Cream butter, sugar and avocado until smooth.
- Add flour and salt.
4. Add eggs, essence and coconut cream. Mix well to form smooth batter.
- Spoon half of batter in muffin pan, carefully add jam and then cover with batter. Bake for 20-25 minutes.
- Serve warm.
