- 2 cups cabbage, chopped and cooked
- 2 cups potato, cooked and mashed
- 4 tablespoons (60ml) oil
- 1 cup bacon, cooked
- 1 cup cake flour, sifted
- 3 tablespoons fresh chives, chopped
- 1 garlic clove, finely crushed
- 1 egg, beaten
- 3 tablespoons (45ml) water
- Salt and pepper
- Micro leaves, for serving
- Spicy mayonnaise, for serving
- Heat oil in a large frying pan.
- In a bowl, mix cabbage, potato, bacon, flour, chives, garlic, egg and water. Don’t make the batter too thin.
- Season with salt and pepper.
- Spoon into frying pan and flatten with back of the spoon.
- Fry for 4–5 minutes or until golden.
- Serve with micro leaves and mayonnaise.
