Make a yummy and tangy lime jam pudding in a flash with this recipe from Ntwenhle Gcabashe

- ½ cups self-raising flour
- Pinch bicarbonate of soda
- ½ cup dark-brown sugar
- 5 eggs
- Juice of 1 lime
- 1 tablespoon lime zest
- 1 cup (250ml) milk
- 1 cup (250ml) oil
- ½ cup strawberry jam
- Custard, for serving
- Preheat the oven to 180ºC.
- Sift flour and bicarbonate of soda in a large bowl. Add sugar.
- In a jug, whisk eggs, lime juice, zest, milk and oil. Divide half mixture into 4 lightly greased baking tins. Spoon jam and top with remaining mixture.
- Bake for 40–45 minutes or until cooked through.
- Serve warm or with custard.
