MUSHROOM AND CABBAGE STROGANOFF

Ingredients
- 4 tablespoons (60ml) oil
- 1 large onion, chopped
- 2 tablespoons paprika
- 2kg mushrooms, sliced
- 1 white cabbage, shredded
- 1 red cabbage, shredded
- 4 cups (1 litre) vegetables stock
- 2 cups (500ml) double cream
- Salt and pepper to taste.
Instructions
- In a large frying pan, heat oil.
- Add onions, fry until soft.
- Add paprika, mushrooms and cabbage. Cook 2-3 minutes. Add stock and cover with lid. Cook for 8-10 minutes.
- Add cream, season well and cook further 3-4 minutes or until thicken. Serve immediately.
