Parsnip Au Gratin

Ingredients
- 1kg parsnips, thinly sliced
- 1 large leek, thinly sliced
- 2 cups thick chopped bacon, cooked
- 3 tablespoons butter
- 3 tablespoons flour
- 1 teaspoon powdered English mustard
- 1½ cups (375ml) cream
- 1 cup Cheddar cheese, grated
- 1 cup feta cheese, cubed
- Salt and pepper to taste
Instructions
- Preheat oven to 200°C.
- Layer parsnips, leek slices and bacon in a lightly greased baking dish. Season well.
- In a saucepan, heat butter, and add flour and mustard. Whisk quickly to form a soft paste.
- Stir in cream and continue whisking to avoid lumps. Allow to thicken.
- Pour over parsnips, leek and bacon. Sprinkle cheeses and bake for 40–45 minutes or until cooked through.
