Ingredients
- 700g penne, cooked according to packet instructions
- 4 tablespoons (60ml) oil
- 4 cups broccoli
- 4 cups sugar snap peas
- 2 cups spinach, chopped
- 1 cup pistachio nuts
- Salt and pepper to taste.
Instructions
- In a frying pan, heat the oil.
- Add the broccoli, sugar snaps and spinach. Cook until all the vegetables are half cooked.
- Gently mix in the pasta and season well.
- Finish with nuts and serve immediately.
