- 2 large potatoes, halved and cooked
- 2 cups frozen peas, thawed
- 4 tablespoons (60ml) oil
- 2 green chillies
- 1 cinnamon stick
- ½ teaspoon cumin seeds
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon curry paste
- ½ teaspoon ground turmeric
- 2 large tomatoes, deseeded and chopped
- 2 cups (500ml) water
- Salt and pepper
- Handful fresh mint leaves, roughly chopped
- Handful cashew nuts, for serving
- Savoury pancakes, for serving
- In a large frying pan, heat oil. Fry chillies, cinnamon stick and cumin seeds for 3–4 minutes.
- Add onion and garlic, and cook for 4–5 minutes or until soft.
- Add curry paste, turmeric, potatoes, peas, tomatoes and water, and mix. Cover with a lid and simmer for 20–25 minutes. Season with salt and pepper.
- Sprinkle with mint leaves and serve with nuts and pancakes.
