Ingredients
- 2 sheets filo pastry
- 4 tablespoons tomato passsata or mashed (peeled) tomatoes
- 2 large red peppers, sliced
- 2 cups cherry tomatoes
- 1 spring onion, chopped
- 2 cups broccoli florets
- 1 cup black olives
- 4 tablespoons parmesan cheese, grated
Instructions
- Preheat the oven to 200°C.
- Carefully stack the filo pastry on top of each other.
- Spoon the tomato passata onto the filo stack and arrange peppers, tomatoes, spring onion, broccoli and olives on top. Sprinkle on cheese and bake in the oven for 10-15 minutes.
- Serve immediately.
