Serves: 6–8
- 4 large butternuts, cubed
- ½ teaspoon ground cinnamon
- 2 tablespoons butter
- 2 tablespoons honey
- ½ cup (125ml) cranberry juice
- 4 tablespoons walnuts, crushed
- 3 tablespoons parsley, chopped
- Pinch salt
- 1 cup Feta cheese, crumbled
- Preheat oven to 180˚C.
- Place ingredients onto a baking tray, except cheese. Roast for 25–30 minutes or until cooked, but still crunchy.
- Sprinkle with cheese, and serve.
