Serves: 4
- 3 tomatoes, sliced
- 1kg vine tomatoes,
- 1kg yellow tomatoes
- 1 cup pumpkin, roasted
- Juice of 1 orange
- 1 tablespoon orange zest
- 4 tablespoons avocado oil
- Salt and pepper
- Handful fresh basil leaves, shredded
- Handful baby spinach
- Roasted chicken, for serving

Dressing
- 4 tablespoons (60ml) balsamic reduction
- 4 tablespoons (60ml) oil
- 1 tablespoon sesame seeds
- Preheat the oven to 180ºC.
- Mix tomatoes, pumpkin, orange juice, zest and oil in a bowl. Season with salt and pepper. Roast until soft.
- For dressing, mix ingredients in a jug. Drizzle over salad. Serve with basil leaves, spinach and chicken.
