Spinach and bacon gratin
Prep time: 15 minutes
Cooking time: 40 minutes
Serves: 2–3
- 3 cups spinach, finely chopped
- 2 cups bacon, chopped
- 1 tablespoon butter
- 1 red onion, chopped
- 1 garlic clove, crushed
- Handful fresh thyme, chopped
- Salt and pepper
- 1 cup (250ml) cream
- 2 eggs
- 1 cup Cheddar cheese, grated
- ½ cup Feta cheese, chopped
- Basil leaves, for serving
- Preheat oven to 180˚C.
- Heat butter, bacon, onion and garlic until soft.
- Add spinach and thyme. Cook until the spinach is wilted. Season with salt and pepper. Transfer into oven dish.
- In a jug, mix cream and eggs. Pour over spinach mixture and sprinkle with cheeses.
- Bake for 25–30 minutes or until golden
- Serve with basil leaves
