Stuffed Amagwinya With Chicken

Ingredients
- AMAGWINYA DOUGH
- 4 cups cake flour
- 1sachet instant yeast
- 3 tbsp castor sugar
- a pinch of salt
- 3 cups warm water
- oil for frying
- CHICKEN AND TOMATO SAUCE
- 2 tbsp oil
- 1 tsp garlic, minced
- 1 tsp fresh ginger, minced
- 1 green chilli
- 1 tsp ground turmeric
- 1 cinnamon stick
- 3 cups chicken breasts, cubed
- ½ cup tomato sauce
- ½ cup (125ml) stock
- salt and pepper to taste
- cucumber to serve
- cherry tomatoes to serve
Instructions
- Combine amagwinya ingredients in a bowl and form a sticky dough. Cover with a kitchen cloth and allow it to double in size.
- Heat oil and fry garlic, ginger and chilli until soft. Add turmeric, cinnamon, chicken, sauce and stock. Let it simmer until the sauce thickens.
- In a separate frying pan, heat the oil and spoon the dough into the hot oil. Let it cook for 4-5 minutes on each side.
- Once cooked, stuff amagwinya with the chicken mixture and serve.
